Spring
Asparagus, spring peas, lamb, morels, wild garlic, and the first of the season's herbs and leaves.
Summer
Tomatoes, courgettes, strawberries, lobster, sea bass, and the abundance of the British summer harvest.
Autumn
Game, root vegetables, wild mushrooms, pumpkin, apples, and the rich, warming flavours of the season.
Winter
Venison, celeriac, Jerusalem artichoke, citrus, and the comforting, indulgent flavours of winter.
